August 14, 2023Students and lecturers of UMN’s Hospitality Study Program won several classes in the biggest culinary competition, The 13th Salon Culinaire 2023.
TANGERANG – UMN’s Hospitality Study Program won several classes in the biggest culinary competition, “The 13th Salon Culinaire 2023,” at JIExpo Kemayoran, Central Jakarta, on June 25-28, 2023.
The international competition organized by Food & Hotel Indonesia 2023 and the Association of Culinary Professionals Indonesia presented 31 competition classes. UMN’s Hotel Operations, consisting of UMN lecturers and students, competed with hundreds of participants from various countries.
Chef and UMN Hospitality lecturer Savira Rizki Pradiati shared her experience as a mentor and participant in this competition. Preparation is done as early as possible with constant practice.
Moreover, the menu standard served in international competitions will be higher than in national competitions. All aspects are considered in depth to meet international standards, from ideas, components, and techniques, to presentation.
“Usually, in two consecutive weeks, they have to cook their menu within a certain time limit, over and over again until they are confident with all the judging points,” Savira explains.
The judging in this competition is done by renowned global and Indonesian judges. The judging points include Taste and Texture, Mise en Place and Hygiene, Correct Professional Preparation, Presentation, and Taste.
“I feel grateful and proud of the discipline, spirit, and resilience of my students in the culinary team during the preparation until the day of the competition. Those are important aspects that I build in them,” Savira said.
The Head of UMN’s Hospitality Study Program, Oqke Prawira, SST.Par, M.Si.Par also appreciated this international achievement. He also said the program will always encourage students to participate in all activities. Not only competitions but efforts are also made through guest lecturer seminars to enrich student knowledge.
Basic culinary skills, both in Indonesia and internationally, are one of the featured materials in UMN’s Hospitality Study Program. Oqke also explained that students are equipped with knowledge of menu planning and product cost control so that they can open an F&B business well in the future.

- UMN 2020 Hospitality student, Graciella Angela received a Diploma in Class Petit four or Praline.
- UMN 2021 Hospitality student, Juaneta Abigail and UMN 2022 Hospitality student, Ratulim received a Diploma in Class Junior Asean Chef Challenge.
- UMN 2020 Hospitality students, Christopher Steven and Zahra Vira Firliyanda earned a Diploma in the Junior Asean Challenge Class.
- UMN Hospitality Student 2021, Juaneta Abigail, received a Diploma in the Asian Cuisine Chicken Class.
- UMN 2022 Hospitality Student, Ratulim received a Diploma in Class Asian Cuisine Chicken.
- UMN 2022 Hospitality Student, Fira Sefirna Ananda received a Bronze Medal in the DiMartino Western Pasta Class.
- UMN 2020 Pehotelan Student, Rosa Amelia received a Bronze Medal in the DiMartino Western Pasta Class.
- UMN 2020 Hospitality Student, Rosa Amelia received a Gold Medal in the Indonesian Tumpeng Class.
- UMN 2020 Hospitality Student, Gisella got Bronze Medal in Class Rose Brand Modern Jajanan Pasar.
- UMN 2020 Hospitality Student, Zahra Vira Firlayanda received a Bronze Medal in the Barco and Aruna River Prawn Class.
- UMN 2020 Hospitality Student, Zahra Vira Firlayanda received a Bronze Medal in Class KEWPIE – Sushi Roll Plater.
- UMN 2020 Hospitality Student, Christopher Steven received a Diploma in the Escoffier Young Talent Class.
- UMN Hospitality Lecturer, Savira Rizki Pradiati earned a Diploma in Class Elle Vire Western Plated Dessert.
- UMN Hospitality Lecturer, Savira Rizki Pradiati received a Diploma in Class Rose Brand Modern Jajanan Pasar.
- UMN Hospitality Lecturer, Adestya Ayu earned a Diploma in Class Rose Brand Traditional Jajanan Pasar.
- UMN Hospitality Admin, Fidiansyah received a Bronze Medal in Kikkoman Fried Rice.
