TANGERANG – The Multimedia Nusantara University (UMN) Hospitality Study Program, together with the Indonesian Chef Association (ICA), held a Regional Conference (Musyawarah Daerah/MUSDA) of the ICA Regional Governing Body (Badan Pengurus Daerah/BPD) Banten. There are a series of Fruit Carving and Plating Techniques workshops held directly at the Lecture Hall of the UMN campus on Friday (26/8/2022).
ICA is an organization consisting of experts in food processing who love the culinary world. This event was held in the context of the election of the new chairman of ICA BPD Banten in 2022/2027.
This event is a form of collaboration and cooperation between the world of education and industry. It is aimed that participants who attend can gain new knowledge and knowledge about the culinary industry and have no gap between the industry and their needs for human resources.
Dr. Florentina Kurniasari T., S.Sos., M.B.A., The Dean of the UMN Faculty of Business, assessed that this collaboration could help prepare graduates to be able to meet the requirements set by the industry.
“We hope that this kind of collaboration can minimize or narrow the existing gap. So that students can get the opportunity to learn directly from their seniors and get hands-on experience on what it’s like to become chefs,” she continued.
In addition, this workshop can foster a sense of introducing and preserving Indonesian foods in the successors of the Indonesian culinary world.
Lucky Permana, the Vice President for Education and Government Institutions of ICA, hopes that the successors of Indonesian cuisine will remain consistent in carrying out and learning traditional Indonesian foods.
“If not us, who else? Because the uniqueness or authenticity of Indonesian food actually helped promote and introduce the country,” Lucky said.

It was followed by a Fruit Carving demo which Chef Bambang and Chef Yayat guided. Participants were taught tricks to decorate and file fruits in this session, and the speakers shared their experiences working in the culinary industry.

The event was closed with a Plating Technique demo hosted by Chef Don Chino, showing how to decorate plates to make food look more delicious and attractive.
